weekend wrap-up! :: 4/7 - 4/13

So busy. So tired. I competed in a horse show this weekend and I am pooped...but I won ribbons!



I got 2nd place in all three of my classes on Saturday - it was a miracle and the judge was too kind!

Thankfully, I prepared some Blueberry Oatmeal Bread as a snack throughout the week. I was doing a lot of riding and exercising and it gave me the energy burst I needed! By using applesauce instead of oil I kept the recipe lower in fat, and the substitution of oats for some of the flour gave it a little more substance.

I finished up an old DIY project - my office chairs! Now that The Hubs is working from home, I enjoy having a nice place to sit and work by myself. Anything can be made pretty with some spray paint and a new pillow. Check out what these chairs looked like before!

The Hubs took me out on a little date in downtown Duluth - some of the businesses in our little city's historic downtown area are hosting "Thirsty Thursday." Drink and food specials? We are so there. Check your city or county website to see if there are any fun events this spring


In preparation for my horse show, I had to clean my tack and boots, so I cleaned some leather furniture and some other shoes as well. Check out this little guide on how to care for leather.

The week wouldn't be complete without another recipe - I found the most incredible meatball recipe online and posted a small-batch copycat version. The Hubs and I made 140 meatballs last weekend from our Zaycon Foods ground beef order and had some for meals this week.

Finally, I just love this picture. We harvested more salad greens and "Bright Lights" Swiss Chard from the garden during this second week of April. Happy Spring!
